Surprisedly nice pancake mix.

I have tried low carb pancake mixes before and they were really bitter and just not nice to eat. This however was not bitter at all. I made a few a little too small and not thick enough and they did fall apart. The last one I made, I made it thicker and it held together. I did add a little stevia to the mix. Topped with the Aunty Mary's sugar free Blueberry Jam that I brought from this site.
