Wholesome Banana Bread
A healthy banana bread made with whole food ingredients, refined sugar free.

Note: Recipe is free from gluten and grains.
3 overripe bananas, mashed
1/3 cup good quality yoghurt (use coconut yoghurt for dairy free)
2 tbsp coconut oil, melted
2 tbsp honey or natural sweetener of choice
1 tsp vanilla extract or powder
1 cup almond meal
1/4 cup coconut flour
1 tsp baking powder
Pre-heat fan-forced oven to 180°C.
In a mixing bowl whisk eggs. Add mashed banana, yoghurt, coconut oil and sweetener and combine well.
Add vanilla, almond meal, coconut flour and baking powder and combine well.
Pour into a lined loaf tin and bake for 30-35 minutes or until cooked through.
Allow to cool.
