Lamington

 

I absolutely love lamingtons, and have seriously missed eating them since I commenced my Keto journey more than two years ago. Seriously though, was is not to love, soft sponge cake, jam, chocolate and coconut. Match made in heaven. With Australia Day fast approaching I thought that I would come up with my own version of a lamington. 

 

Ingredients:

1 packet of 180 cakes vanilla cupcake mix

3 tbs Hawthrone Hill Raspberry Jam

40gm Little Zebra Chocolate Coconut Supreme

2 tbs cream

Desiccated coconut to coat cakes

 

Method:

Cook cakes as per instructions on packet. I used a silicone ice mold from kmart which was the perfect shape. 

Cool slightly and then put on wire rack to cool completely.

When cooled, slice cakes in half. 

Apply jam to middle and put cakes back together like a sandwich.

Melt chocolate. I melt mine for 20 second intervals in the microwave, stirring well after each cycle. Once melted stir in cream.

Dip each cake into the melted chocolate and then roll in coconut. 

Leave to firm up - can take up to 1 hour to firm up. (I left mine on the wire rack) 

 

The last few steps are pretty messy, but my kids loved helping!
