Low Carb Herb & Olive Loaf
An easy low carb savoury loaf with burst of flavour from olives, herbs and garlic.

6 large free range eggs
3/4 cup sparkling water
4 garlic cloves, crushed
2 tbsp dried herbs of choice
12 large olives, pitted and chopped
2 1/2 cups almond meal
3 tbsp tapioca flour (or add additional 1/3 cup almond meal)
2 tsp gluten free baking powder
Pinch sea salt
Pre-heat fan-forced oven to 180°C.
In a large mixing bowl whisk eggs. Add sparkling water and combine.
Mix in garlic, herbs and olives.
Add almond meal, tapioca flour, baking powder and salt. Mix to combine well.
Spoon batter into a lined loaf tin.
Bake in oven for 45 minutes or until cooked through.
