Low Carb Chicken Caesar Salad by Casey-Lee Lyons from Live Love Nourish

 

Prep: 15 minutes Serves: 4

Ingredients:

1 cos lettuce, washed, leaves torn

2 soft boiled eggs, halved 2 chicken breasts

1 tbsp extra virgin olive oil

2 tsp dried oregano

1 tsp garlic powder

Pinch chilli powder

Avocado Caesar Dressing:

1/2 cup mayonnaise

1/4 avocado

1 cloves garlic, minced

2 tbsp fresh lemon juice

1 tsp tamari (wheat free soy sauce)

1/2 tsp mustard powder

1/2 tsp apple cider vinegar

 

1/2 cup bacon

Croutons

4 slices low carb bread

Garlic infused olive oil or extra virgin olive oil

Method:

1. First make salad dressing to set aside. Blend mayo, avocado, garlic, lemon juice, tamari, mustard powder and apple cider vinegar in a blender or hand held blender until smooth. Add 1-2 tbsp water to achieve desired consistency. Season with a touch of sea salt if needed. Set aside in refrigerator.

2. Pan fry bacon until crispy. Set aside.

3. Meanwhile, cut pieces of bread into small cubes. Place onto a lined baking tray and drizzle with garlic infused olive oil. Bake in oven until golden and toasted (approx. 5 minutes). Set aside.

4. Drizzle chicken breast with olive oil and sprinkle with oregano and garlic powder to cover both sides. Heat a frying pan over medium heat with olive oil. Pan fry chicken breast both sides until cooked through. You can also bake in oven. Set aside. Slice thinly just before serving.

5. In a mixing bowl, toss cos lettuce with dressing. Serve onto plates.

6. Top dressed leaves with sliced chicken, soft boiled eggs, bacon and croutons. Serve fresh.
