1 tbsp oil
500g Chicken breasts, diced
1 packet Mingle Seasonings Butter Chicken
1 can coconut cream
400 ml passata
2-3 tsp salt
1 packet frozen spinach or fresh if you'd prefer
1/2 broccoli, cut into florets
1/4 cup cauliflower rice
1. Heat oil, saute diced chicken for 2-3 minutes. Add all ingredients except for the vegetables.
2. Stir through and bring to a boil. Reduce heat and simmer for 15-20 mins.
3. Add all vegetables, stir and continue to cook for a further 5-10 minutes, until vegetables are tender.
4. Top with slivered almond, a drizzle of cream and cauliflower rice
