Thai Red Curry by Kim @deliciously.keto
Ingredients:
1 tbsp oil
1/2 red onion, diced
1/2 red capsicum, sliced
1 tsp garlic, crushed
1 tsp ginger, minced
2 large chicken breast, sliced
1 packet Mingle Red Curry Seasoning
1 can coconut cream
3/4 cup chicken bone broth/stock
1 bok choy, sliced
2 spring onions, sliced
2 tbsp crushed cashews, optional
Fresh coriander leaves
Method:
1. Heat oil in a large pot and sauté the onion and capsicum until softened.
2. Add garlic and ginger and sauté for a minute. Add chicken and sauté until browned all over.
3. Add seasoning, coconut cream and bone broth. Stir until well combined and bring to a boil. Reduce heat and simmer for 20 minutes.
4. Add sliced bok choy just before serving. Top with sliced spring onions, crushed cashews and fresh coriander.
