Cookies and Cream Cheesecake Whip

(serves 4)
250g cream cheese, softened
1 cup cream
1 tsp vanilla essence
1 tbsp erythritol, optional
2 Quest double choc chip cookies, crushed
1. Using electric beaters whip the softened cream cheese until it's light and smooth. Add all other ingredients (except the crushed cookies) to the cream cheese mixture.
2. Continue to whip until the mixture becomes thick and fluffy, adjust sweetness to taste.
3. Gently fold through the crushed cookies (reserve 1 tbsp for topping) until well combined.
4. Divide mixture into 4 serving dishes, top with reserved crushed cookies. Melted chocolate and chocolate curls can also be used to top desserts if desired.
